Healthy Nutella Mug Cake
A friend of mine posted an evil looking Nutella mug cake on facebook the other day. It was the type that gives you cavities and makes you gain weight just by looking at it! Evil, I tell you! Evil!
So, I decided to make my own version that is actually healthy and won’t cause you to lose sleep from the guilt. Actually, the only thing you may lose is a couple of pounds. Yes, this is that good!
I started with a basic low carb muffin in a minute recipe. If you aren’t familiar with what that is, you are in for a nice treat.

Here you see Golden Flax Seed, Almond Flour, NutiLight, Hershey’s Cocoa, Pink Himalayan Sea Salt, Xylitol, Baking Powder, and butter (yes, that’s real butter! You don’t want to use any of that margarine stuff. It’s just not good for you) and an egg.
Please don’t be fooled by the lovely Spice Rack in the background. My husband thought I would use it and label all of my spices. I bribed a friend with babysitting to fill what you see there. This is what my spice collection REALLY looks like:
Now that that’s been cleared up… let’s continue…
Mix all of the dry ingredients and melt the butter.
Add the egg and butter, then realize the ramekin is too small and grab a bigger coffee mug.
That should do it.
When you’re done mixing, add the Nutella Light. Here is a side by side comparison of the nuti light and the regular nutella ingredients list. The first ingredient in the light version is chicory root fiber and the first ingredient of the regular is sugar. Which would you rather have? Just drop it in the center then pop it in the microwave for a minute. If it’s not done, try about 30 seconds longer. I have a strong microwave that my daughter gave me for a birthday present one year. I lurve her.

Here is the original recipe and my healthy version:
Original Nutella cake regular ingredients… boooo!!
1/4 cup flour
2 tbsp unsweetened cocoa
1/4 tsp baking powder
2 tbsp sugar
1/8 tsp salt
1/4 cup plus 1 tbsp milk
2 tbsp oil
1 tbsp nutella
Total fat: 21.0 g
This is the equivalent of 15.6 teaspoons of sugar in ONE SERVING!
Now my healthified version:
Healthified Nutella Cake: Yay!!!
2tbsp golden flax seed meal
2tbsp almond flour
1tbsp unsweetened cocoa powder
1tbsp nutella light
1/2 tsp baking powder
1 tbsp melted butter
Total fat: 35.1
The total carb and fiber difference alone in the original recipe and mine is crazy!
Original recipe has 67.6 carbs and only 5.1g of fiber for an equivalent of 15.6 tsp of sugar for one serving.
Mine has 20.6 total carbs with 13.3g of fiber for the equivalent of 1.8tsp of sugar!
Women under the age of 50 are supposed to have 25 grams of fiber daily, and men under the age of 50 should have 38 grams daily, so this recipe is a great way to get your fiber and chocolate fix at the same time!

Healthy Nutella Mug Cake
A one minute low carb mug cake with nutella light.
- 2 tbsp golden flaxseed meal
- 2 tbsp almond flour
- 1 tbsp xylitol/swerve
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1 large egg
- 1 tbsp melted butter
- 1 tbsp nutiLight
Mix all of the ingredients together except the nutella. When it is all mixed well, drop a spoon full of the nutella in the center.
Put it in the microwave for 1 minute on high
Dump the cake from the mug onto a plate, top with some whip cream and enjoy without the guilt!
