30 Minute Lazy Salsa Chili
I wanted chili, but it was already 6 pm on a Tuesday. So I started looking around at what I had to come up quick for supper. I think this is the story of my life. Last minute, everything! I rummaged around and thawed some ground beef out in the microwave with no idea what I was going to do with it. Then I saw the jar of salsa! Um, I could use that for chili! It has everything already cut up for me. This could work! I had a few jars of tomato sauce and a can of beans! Yes!
I happened to have some chili/taco seasoning mix already made up. I found it in the Quick & Easy Ketogenic Cooking It is probably one of the best books I’ve ever bought, I use it more like an encyclopedia than a cook book, and highly recommend it. You could also just use a pre-seasoned packet from the store or your own favorite blend of spices.
Just start by browning the ground beef. I like to use the 93% lean so there isn’t so much fat. You could add in some jalapenos, extra onions and garlic here too if you’d like.
Add everything else into the pot and let it heat up. It can’t get much easier than that. I may have used a tad too much of the seasoning mix. I’m glad I didn’t have a jar of jalapenos. I’m not sure anyone would have been able to eat it.
You’re probably wondering why I used the can of beans. Well, there aren’t that many carbs once you subtract the fiber and that’s per serving of 1/2 a cup. You probably aren’t going have a full serving in one bowl of chili. There are 18 total carbs minus the 7 grams of fiber is 11 net carbs. It’s really just personal preference and just one can for the entire recipe, so I am ok with that.
Well there you have it. A quick easy meal for a weeknight when you had nothing planned and waited until the last-minute to make supper like I did. Load it up with your favorite toppings, I choose shredded Mexican cheese and sour cream.

Super Easy Lazy Chili
Here is a quick easy recipe for a week night meal when you have nothing else planned.
- 1 lb Ground Beef 93% lean
- 24 oz Salsa
- 15 oz Tomato Sauce sugar free
- 15 oz Fire Roasted Tomatoes
- 2 tbsp Chili Seasoning or a premixed packet
Brown the ground beef and spices.
Add the salsa, tomato sauce and diced tomatoes. Let simmer for about 5 minutes.
Top with cheddar cheese and sour cream. Serve and enjoy.
Top with your favorite extras like cheese, sour cream, chopped red onions, or cilantro.
