Whole 30 Chili Stuffed Sweet Potato

Did you have a New Years Resolution?  Did you follow through with it?  I did.  I followed the Whole 30 program for the month of January.  It was not as hard as I thought it would be.  This was one of my favorite recipes that I followed. You can have potatoes and sweet potatoes on Whole 30.  I love sweet potatoes! So here is an easy way to make Whole 30 Chili Stuffed Sweet Potatoes.

I used two sweet potatoes and one regular yellow potato.  My husband is weird and doesn’t like the sweet potatoes.  I just pierced them with a fork a few times each and put them in the microwave on the baked potato setting.

This is another simple recipe for a busy week night if you have nothing planned.  I just used a pound of 93% lean ground beef, some seasonings, salsa and potatoes. Cooking the potatoes actually took longer than preparing the rest of the recipe.

I used a simple chili spice mix.  1/2tsp of chipolte chill pepper, 1 tsp of cumin, 1/2 tsp smoked paprika, 1/2 tsp sea salt.  I usually have the pink Himalayan salt, but I was out, so I used simple table salt instead.

So, just dump everything together in your pan and cook until the meat is no longer pink. I started off with 1/2 cup of salsa but I added more because I wanted more of a chili like consistency.  I also like the medium salsa, that mild stuff is for wimps! Don’t be a wimp.

When the potatoes finish cooking, I just cut them open and put your chili mixture on top. There you have it: Whole 30 Chili Stuffed Sweet Potato.

I topped it with Dairy Free Ranch Dressing.  My teenager enjoyed this, and that is always a plus!  Here is the full printable recipe:

Chili Stuffed Sweet Potato


  • 1 pound ground beef 93% lean
  • 1 cup medium salsa
  • 3-4 whole potatoes
  • 3-4 tbsp Ranch Dressing to taste

Spice mix

  • 1/2 tsp chipolte chili pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1 tsp cumin


  1. Pierce potatoes with a fork and cook in the microwave on baked potato setting.

  2. Cook ground beef until no longer pink. Drain if necessary.

  3. Add the salsa and spices. Mix well.

  4. When the potatoes are done, cut open and top with chili mixture and ranch dressing,

  5. Enjoy!
