Low Carb Strawberry Ice Cream Recipe

Now that the weather is getting warmer, who wants ice cream? Who wants ice cream that is healthy? Who wants ice cream that you can make in less than 5 minutes?  Here is a Low Carb Strawberry Ice Cream Recipe that is healthy and guilt free.

Like I said, you really just need 3 ingredients. I just came up with this on a whim one day last year and gave a bowl to my teenage son.  His favorite ice cream flavor is strawberry, and he said I needed to open my own ice cream shop.  Yes, it’s that good!

Blender Low Carb Strawberry Ice Cream Recipe

Just put the bag of strawberries into the Blender with 1/4 cup Erythritol and 3/4 – 1 cup of Heavy Whipping Cream and blend until creamy.  I forgot a picture of the cream after I added it.  Sorry about that!

Seriously, you get the best of both worlds with this recipe.  You get the health benefits of real strawberries without the sugar and other nasty artificial ingredients that you would get with store bought ice cream or from an ice cream shop. This is a win-win!

Since I forgot to get a an after picture in the blender here it is for a taste test.  It’s pretty soft at this point, but still yummy! I think Ramekins make the perfect ice cream bowl.

You could also use other berries in this.  A bag of blueberries, or maybe some mixed berries would be delicious. Try different ones out, go wild! Let me know which ones you liked.

 

After a few hours in the freezer… voila! You have 3 Ingredient Low Carb Strawberry Ice Cream! It’s very satisfying on a hot summer day.
*NOTE* This freezes completely solid over night.  It’s best made and eaten the same day.

Low Carb Strawberry Ice Cream

Healthy Low Carb Strawberry Ice Cream with just 3 ingredients.

Ingredients

  • 1 lb bag Frozen Strawberries
  • 1/4 cup Erythritol or sweetener of your choice
  • 3/4-1 cup heavy whipping cream

Instructions

  1. Add everything to a blender and blend until smooth.  Store in an air tight container for several hours until frozen.

  2. Eat to cool down on a hot summer day.  Or any day.

  1. I love it but it’s more icy then I would have like any suggestions on how to make it more like ice cream then an icy? But flavor was spot on

    • I think you have to not let it freeze completely solid. It’s more of a make it and eat the same day recipe. Thanks for the comment!
