Salsa Chicken In The Pressure Cooker

Do you like fast easy meals for busy weeknights?  I know I do. I always get caught up in the business of the day and when it’s time for supper, I usually forgot to thaw something out.  That isn’t a problem now that I bought my Instant Pot!  You can put anything in this thing and it’s done, even from frozen, in minutes.  I’m not even kidding! Everyone who has a kitchen needs one of these.  I love it so much I bought two as birthday presents this year for my mother in law and daughter.  I just call this Salsa Chicken in the Pressure Cooker.

InstantPotSalsaChickenThe recipe is really only two ingredients.  I top it with cheese after it’s finished.  Two ingredients and done from frozen in minutes.  It doesn’t get any better than this folks!


The metal pot comes out so it’s easy to add your ingredients. I think I used about 6 whole chicken breasts and dumped the whole jar of salsa over it.  Now, you can stop here and cook it as is, or you can get really brave and add a jar of this:

salsa chicken in the pressure cookerLet me warn you, do not try these Peppers if you don’t like your spice just a little short of battery acid, as one of my friends puts it.  They are really spicy!

InstantPotSalsaChickenIf you’re brave enough, go ahead and put it in there.  InstantPotSalsaChickenHere is where the magic happens.  You put the lid on, and push the button that says poultry.  That’s it.  It is really that easy.  Did I mention how much I love this thing? It will take a little while longer to come to pressure because of using the frozen chicken.  I’m not really sure how much longer, maybe 30 minutes or so.  I never timed it.  When it is done, it will beep and you can release the pressure manually because it’s Monday and you’re starving and this smells amazing! I just used two forks and shredded it. This is what it will look like.

You can serve it anyway you like.  I served mine over Cauliflower Rice.


Or you can do lettuce wraps with or without cheese if you’re dairy free.  This is a great way to use your left overs the next day for lunch.  You don’t even have to heat it up, it’s good to eat cold on a hot summer day.

Salsa Chicken In The Pressure Cooker

An easy chicken dinner that you can make in minutes from frozen using the InstantPot.

Servings 6


  • 1 lb Chicken Breast can be frozen
  • 24 oz Salsa check the label for added sugars
  • 7 0z Chipoltes in Adobo Sauce optional if you really like heat


  1. Add all ingredients to the instant pot and press the poultry button. 

  2. When the pressure has released, shred the chicken and serve however you like it.
